A real answer, not just "as many as you can afford"
The honest answer is that more days generally means a better trip — but that's not very useful on its own, so here's what actually changes at different lengths.
Enough for a focused visit to one or two parks — the Serengeti alone, for instance — without much room for the wildlife or weather to fully cooperate. Fine if time is genuinely limited, less ideal as a first safari.
Enough to cover Tarangire, Ngorongoro, and the Serengeti properly, with real time in each rather than a rushed pass-through. This is where most well-rounded first safaris land.
Enough to do the full Northern Circuit unhurried and still close the trip with several days on the coast, or add Kilimanjaro instead.
Enough to combine Tanzania with Kenya's Masai Mara, or Uganda/Rwanda gorilla trekking, or simply move at a genuinely unhurried pace throughout.
